Initial flavors of black tea with a hint of berry, moving through a juicy orange citrus acidity.

There is a hint of nut, toffee and caramel with a buttery body and a long cocoa finish.

We love washed Ethiopian coffee's clean, sweet acidity and extraordinary fruit complexity.

Like its neighbour Yirgacheffe, Sidamo washed coffees make excellent choices for milk-based espresso coffee beverages with more profound levels of chocolate and cocoa.

How we roast our Ethiopian-washed coffee beans

We roast our Ethiopian coffees to a medium level, similar to cafe-style espresso.

It's important to note that this roasting style helps retain all the goodness and inherent qualities in the roasted coffee.

Whilst some roasted coffees may appear slightly darker brown, there is a good reason for this darker shade of colour. Darker shades of the roasted coffee do not mean it was "over-roasted" simply because the quality coffee contains higher sugar levels (sometimes referred to as brix). Like anything with high levels of sugars, heat it, and it turns brown, or to be more precise, dark brown.

Our single-origin Ethiopian coffee beans from Sidamo and Yirgacheffe fall into this category. In contrast, natural processes like Bensa and Harrar always present lighter shades of brown, so don't let the outer colour shade fool you.

For plunger, drip or percolator, a Sidamo coffee delivers perfectly tasting punchy and complex flavours that are rewarding and satisfying.

Sweet notes of berries, black tea, caramel and chocolate can be found, especially in milk-based beverages where the clean acids match perfectly with milk or dairy alternatives.

About Our Sidamo coffee beans from Ethiopia

Our Ethiopian coffees are purchased in smaller quantities from different lots throughout the normal 6-month coffee crop cycle.

With multiple lots arriving in our warehouse every few months, the coffees we roast and ship to our customers will change.

These changes are entirely regular and have no cause for concern or alarm.

Fresh coffees are better than holding raw coffee for a year and losing the vitality, vibrancy and fine acidity.

Washed versus Naturals

We prefer washed coffees as Single Origin offerings in our store for our Sidamo coffees.

We love washed Sidamo coffees because of the cleaner cup and vibrant acidity, which match the milk-based espresso prevalent in Australian coffee culture.

The type of cup we look for in Sidamo are notes of berry black tea with a chocolate finish.

Why has the price increased?

Ethiopia has always been a challenging origin for sourcing coffee.

The shipping ports are overloaded and congested; sometimes, a container can take many months to clear and ship. Transport and infrastructure could be better, and the internal bureaucracy makes attempting to organise anything sensible a complete nightmare.

Throw in a multi-year civil war and a government trying to control the flow of goods via a highly regulated exchange. Now, we have the local currency devaluing at astonishing rates.

Coffees trade in US dollars. Nobody wants to be stuck holding the Ethiopian currency, so sellers and exporters of raw coffee must raise their prices so they receive reasonable returns on their products.

As a consequence, Ethiopian coffees are expensive. They were expensive before due to intensity and cup quality, but now they are on another price level.

How long will it take : Nobody can really say, but the good news is we dispatch very fast, within an hour. Espresso brew recipes assume professional or commercial equipment (machine in grinder) are used.

For domestic (consumer) grade, please ensure you adjust the suggested values accordingly.

Tips - A washed coffee with plenty of density in the roasted coffee. It will benefit from using an open-shot style.
There is plenty of lime acidity in this Sidamo, which pairs well with milk or dairy alternatives.
We prefer a more open or loose shot for black drinkers.
Otherwise, try a double-ristretto to savor the fruity acids.

How we roast your coffees

light, medium or dark

Each coffee in our store has a unique roast profile carefully engineered and continuously updated to achieve the best balance of flavor, body, complexity, acidity, sweetness and finish.

It's a never-ending process with new lots arriving almost weekly along with the constantly changing Melbourne weather conditions.

We don't use light, medium or dark as our guide. That's so outdated and quite frankly inaccurate with around 20 shades each of light, medium and dark.

The external or outside color is never a true indicator of a coffee's cup attributes (or performance).

In other words, coffee can appear dark outside but have under-developed internals (sour, flat, weak, thin, etc.) if it was roasted poorly.

Similarly, a light exterior can easily mask or hide internal scorching or invalid roasting profile.

The target for all of our coffees (excluding specific filter roast products that are intentionally roasted lighter) is medium.

Think cafe style and coffee that is best suitable for espresso or traditional brewing devices.

What's critically important to us is that we extract maximum goodness for you to enjoy.

After 20 years and hundreds of thousands of batches, we think our Tier 1 infrastructure, skills and experience surpass the market.

Ground coffee

Ground coffee will lose around 80% of essential vitality after 15 minutes oxygen exposure. Even ground coffee inside of a sealed, unopened bag will stale considerably within 2 weeks.

Some brewing applications, such as espresso, require roasted coffee in peak freshness to produce a delicious extraction. Other brew methods are less sensitive to the impact of staling coffee.

To ensure freshness, we never hold, store or manufacture any ground coffees. All our coffees are packed as whole beans within 1hr of roasting to lock in freshness.

When a customer orders ground coffee, we take fresh roasted beans, cut the seal, grind, clean and re-seal within 60 seconds. All at the moment your order is packed for dispatch.

We recommend for the best coffee experience to consider purchasing whole beans and grind only enough to brew just moments beforehand.
