Rare, fruity and delicious.

Sumatran coffees are mostly processed using the wet-hulled method.
So when a beautiful, naturally processed (sun-dried) Sumatran lot becomes available, we jump at the chance to secure the coffee.
In almost 20 years of roasting Sumatran coffees, we can count the times a super quality natural has popped up on one hand.
This lot is simply spectacular, so we have dedicated all the roasting of this coffee to our Filter-Style (light roast) program.
You won't see this coffee as a medium or espresso roast.
It's only going to be available as a Filter-style roasted coffee.
Let's drill down into what makes this coffee special.
Firstly, it's a super-fresh, new crop.
Then we can talk about how Sumatran coffees always punch above their weight in the cup - for both complexity and flavour.
This natural lot is no exception. The sun-dried processing has amplified sweetness off the scale.
Think brown sugar, strawberry, plum and chocolate. Yum.
As a lighter style roast, more commonly referred to as "filter style", the coffee is ideal for modern or alternative brewing devices such as filter, drip, pour-over, V60, syphon, Aeropress, and immersion.
Pure espresso enthusiasts with good equipment (machine and grinder) and extraction techniques can enjoy this lighter roast for the sweetest shots.
Our specialized platform uses a unique roasting process using lower temperatures and shorter roasts.

This customized roasting platform enables a lighter-roasted coffee to present with sufficient flavour, sweetness, and acidity to ensure proper roast profile development without suffering the effects of grassy, woody, or herbal flavours from an under-roasted coffee.
However, filter-style roasts will deliver higher and sweeter acidity, greater fruit complexity and increased clarity of flavours.

Espresso brew recipe

Espresso brew recipes assume professional or commercial equipment (machine in grinder) are used.

For domestic (consumer) grade, please ensure you adjust the suggested values accordingly.

Dose - 20 - 22 grams

Yield - 39 grams

Brew Time - 26 seconds

Ratio - 1 : 1.65

Tips - Light-roasted coffees, e.g. filter roast are more difficult to dial in for espresso extraction than the slightly darker medium-roasted espresso coffees.
This is a relatively soft bean, grown at 1350 masl.
As there are far too many different recipes for alternative brewing, we are just going to list our preferred espresso formula.
Please be mindful of dose and grind as this coffee will bloom and swell during pre-infusion at a significant rate - hence, it may require a lower dose and coarser grind for espresso extraction.

How we roast your coffees

light, medium or dark

Each coffee in our store has a unique roast profile carefully engineered and continuously updated to achieve the best balance of flavor, body, complexity, acidity, sweetness and finish.

It's a never-ending process with new lots arriving almost weekly along with the constantly changing Melbourne weather conditions.

We don't use light, medium or dark as our guide. That's so outdated and quite frankly inaccurate with around 20 shades each of light, medium and dark.

The external or outside color is never a true indicator of a coffee's cup attributes (or performance).

In other words, coffee can appear dark outside but have under-developed internals (sour, flat, weak, thin, etc.) if it was roasted poorly.

Similarly, a light exterior can easily mask or hide internal scorching or invalid roasting profile.

The target for all of our coffees (excluding specific filter roast products that are intentionally roasted lighter) is medium.

Think cafe style and coffee that is best suitable for espresso or traditional brewing devices.

What's critically important to us is that we extract maximum goodness for you to enjoy.

Ground coffee

Ground coffee will lose around 80% of essential vitality after 15 minutes oxygen exposure. Even ground coffee inside of a sealed, unopened bag will stale considerably within 2 weeks.

Some brewing applications, such as espresso, require roasted coffee in peak freshness to produce a delicious extraction. Other brew methods are less sensitive to the impact of staling coffee.

To ensure freshness, we never hold, store or manufacture any ground coffees. All our coffees are packed as whole beans within 1hr of roasting to lock in freshness.

When a customer orders ground coffee, we take fresh roasted beans, cut the seal, grind, clean and re-seal within 60 seconds. All at the moment your order is packed for dispatch.

We recommend for the best coffee experience to consider purchasing whole beans and grind only enough to brew just moments beforehand.

    Wild and syrupy

    We use a cold brewer and this coffee is wild. In a good way. Very syrupy for a light roast.
