A seriously punchy coffee with rich complexity of bakers chocolate, black tea, cocoa, brown sugar sweetness and a long low acid finish.

The traditional wet-hulled processing method results in a low acidity with a bold body and long lingering aftertaste.

Acids are tamed and balanced with notes of nectarine and white grape acidity.

Description

Sulawesi (sometimes called Celebes) is a small Indonesian island growing arabica coffee of rare and exotic qualities.

This lot has been grown in the famous Toraja region as a beautifully prepared Kalossi Grade 1, wet-hulled using the traditional Sumatran processing techniques to enhance flavour, body, intensity and sweetness.

The result is a flavour powerhouse with taste notes of baker chocolate, brown sugar candy sweetness, spice, nectarine and white grape acidity that is elegantly refined and beautifully balanced.

We love the rich, intense, syrupy body with a beautiful aftertaste that lingers forever.

Coffee enthusiasts will love this complex coffee, discovering the dark, spicy features with something different to enjoy.

Sulawesi Kalossi is a unique coffee experience from a country that produces a small volume of quality arabica. Please be aware that this coffee is only available sometimes.

Like all wet-hulled Sumatran coffees, this Sulawesi Kalossi Gr 1 also requires a finer grind setting.

About Sulawesi Kalossi Coffee

Sulawesi is a tiny island that produces a minimal amount of coffee yearly.

As one of the world's smallest coffee producers, it is a complicated and challenging origin to source consistently throughout the seasons.

When we can get it, which is rare, and the coffee is this good, we jump at the chance. 

Sulawesi coffees are excellent.

Deep complexity, exciting flavours, and bold cups keep you returning for more.

This coffee may also be known as Toraja, Bukit Marante, and Celebes Kalossi.

This Sulawesi Kalossi is a Grade 1, wet-hulled lot and a perfect example of the classic style from Sulawesi.

Espresso brew recipes assume professional or commercial equipment (machine in grinder) are used.

For domestic (consumer) grade, please ensure you adjust the suggested values accordingly.

Tips - Sulawesi is from a similar area to other Indonesian coffees and is farmed and processed using the same wet-hulled methods.
It has plenty of moisture and soft density, so will require a much finer grind setting. Think Sumatran and then back off just a fraction.
Sensational complexity with myriad flavour notes and balanced acidity, the brew times can be either short or long depending upon preferred taste.
Fantasic coffee with plenty of surprise elements once it is properly dialled in.

How we roast your coffees

light, medium or dark

Each coffee in our store has a unique roast profile carefully engineered and continuously updated to achieve the best balance of flavor, body, complexity, acidity, sweetness and finish.

It's a never-ending process with new lots arriving almost weekly along with the constantly changing Melbourne weather conditions.

We don't use light, medium or dark as our guide. That's so outdated and quite frankly inaccurate with around 20 shades each of light, medium and dark.

The external or outside color is never a true indicator of a coffee's cup attributes (or performance).

In other words, coffee can appear dark outside but have under-developed internals (sour, flat, weak, thin, etc.) if it was roasted poorly.

Similarly, a light exterior can easily mask or hide internal scorching or invalid roasting profile.

The target for all of our coffees (excluding specific filter roast products that are intentionally roasted lighter) is medium.

Think cafe style and coffee that is best suitable for espresso or traditional brewing devices.

What's critically important to us is that we extract maximum goodness for you to enjoy.

After 20 years and hundreds of thousands of batches, we think our Tier 1 infrastructure, skills and experience surpass the market.

Ground coffee

Ground coffee will lose around 80% of essential vitality after 15 minutes oxygen exposure. Even ground coffee inside of a sealed, unopened bag will stale considerably within 2 weeks.

Some brewing applications, such as espresso, require roasted coffee in peak freshness to produce a delicious extraction. Other brew methods are less sensitive to the impact of staling coffee.

To ensure freshness, we never hold, store or manufacture any ground coffees. All our coffees are packed as whole beans within 1hr of roasting to lock in freshness.

When a customer orders ground coffee, we take fresh roasted beans, cut the seal, grind, clean and re-seal within 60 seconds. All at the moment your order is packed for dispatch.

We recommend for the best coffee experience to consider purchasing whole beans and grind only enough to brew just moments beforehand.
