Description

High-flavoured chocolate.

El Salvador was the first coffee origin we fell madly in love with two decades ago when we started roasting coffee.

Without even knowing at the time, it was purely by accidentally we stumbled upon an exceptional Bourbon lot from the El Salvador estate "Himalaya". So impressive was this coffee that we kept on hunting for 15 years.

El Salvador coffees exhibit exceptional balance and sweetness when used in espresso, and for many years, we mandated El Salvador coffees in all our best blends. There is a delicious and soft chocolate note that lights up the cup.

However, back in 2010, the severe impact of Roya (Coffee Leaf Rust) had long-lasting effects on El Salvador's coffee industry. Unfortunately, the result was so great that even now, 13 years later, El Salvador's coffee industry still struggles to recover fully.

With lower harvest volumes over many years, El Salvador still needs to build a profile on the global coffee market like the large and famous Honduras or Colombia.

That's a shame because El Salvador produces excellent qualities that match Costa Rica and Colombia and are superior to many other origins.

Unfortunately, the future of coffee in El Salvador is dire, which is a real shame as El Salvador can produce some fantastic coffee.

With a sweetness that can surpass Brazil, a sparkling acidity matching Costa Rica, and extraordinary chocolate complexity from Colombia, El Salvador coffees have every element in place with potential for greatness.

We love the inherent richness provided by El Salvador coffees. There is delicious chocolate that resonates perfectly.

Located in the highlands of the Santa Ana Volcano, El Borbollon produces high-quality coffees through a meticulous milling process.

Coffees are hand-picked by trained individuals, selecting only the ripest, most mature cherries.

The mill will sort the cherries based on their region and level of maturity upon presentation. They will then undergo pulping, fermenting, washing, and sun-drying on aged clay patios.

Espresso brew recipes assume professional or commercial equipment (machine in grinder) are used.

For domestic (consumer) grade, please ensure you adjust the suggested values accordingly.

Tips - Gosh, this is a lovely coffee, especially in milk. The pinnacle of classic coffee flavours and cup balance.
For lovers of black brews, it has sweet citrus acidity, which can work equally well as a double ristretto or a long black.
In milk or dairy alternatives, it just shines.
Coffee that is easy to work with and produces exceptional results across a wide tolerance of grind and dose settings - a true mark of its excellent pedigree.

How we roast your coffees

light, medium or dark

Each coffee in our store has a unique roast profile carefully engineered and continuously updated to achieve the best balance of flavor, body, complexity, acidity, sweetness and finish.

It's a never-ending process with new lots arriving almost weekly along with the constantly changing Melbourne weather conditions.

We don't use light, medium or dark as our guide. That's so outdated and quite frankly inaccurate with around 20 shades each of light, medium and dark.

The external or outside color is never a true indicator of a coffee's cup attributes (or performance).

In other words, coffee can appear dark outside but have under-developed internals (sour, flat, weak, thin, etc.) if it was roasted poorly.

Similarly, a light exterior can easily mask or hide internal scorching or invalid roasting profile.

The target for all of our coffees (excluding specific filter roast products that are intentionally roasted lighter) is medium.

Think cafe style and coffee that is best suitable for espresso or traditional brewing devices.

What's critically important to us is that we extract maximum goodness for you to enjoy.

After 20 years and hundreds of thousands of batches, we think our Tier 1 infrastructure, skills and experience surpass the market.

Ground coffee

Ground coffee will lose around 80% of essential vitality after 15 minutes oxygen exposure. Even ground coffee inside of a sealed, unopened bag will stale considerably within 2 weeks.

Some brewing applications, such as espresso, require roasted coffee in peak freshness to produce a delicious extraction. Other brew methods are less sensitive to the impact of staling coffee.

To ensure freshness, we never hold, store or manufacture any ground coffees. All our coffees are packed as whole beans within 1hr of roasting to lock in freshness.

When a customer orders ground coffee, we take fresh roasted beans, cut the seal, grind, clean and re-seal within 60 seconds. All at the moment your order is packed for dispatch.

We recommend for the best coffee experience to consider purchasing whole beans and grind only enough to brew just moments beforehand.
